Thai Green Curry Cod Recipe

Last November I visited Chiang Mai, Thailand and took a cooking class at the Thai Farm Cooking School. One of the dishes I cooked was a green curry (my fav) with chicken and tofu. Once the class was over we received a recipe book with all of the dishes we cooked Often times I seek ways to challenge myself in the food department and make my taste buds happy. Instead of doing the traditional green curry with chicken or tofu, I thought what if I compliment the curry with fish.

I found a few pieces of Cod in my refrigerator that I purchased for my sister because that is her fish of choice (not mine). I was raised in a family where food is not wasted and I had to get creative to eat the Cod and not throw it in the trash.
This recipe is a spin on the recipe I received from the Thai Cooking School.

  1. 2 tbsp olive oil (or any of your choice)
  2. 1 zucchini, sliced
  3. 1 yellow squash, sliced
  4. 2 red hot chili peppers, thinly sliced (optional if you like spice or can use 1 red bell pepper)
  5. 4 tbsp Green Curry Paste
  6. 2 cans of Coconut Milk
  7. 2 tsp palm sugar (can use regular sugar)
  8. 2 tbsp Fish Sauce
  9. Juice of 1 lime (can use 5 kaffir leaves)
  10. 2 whole green onions, sliced (separate bulb from green)
  11. 10 leaves of sweet basil, rough chop (can use regular basil)
  12. Salt and pepper, to taste
  1. 4 (6-8oz.) portions of Cod
  2. old bay seasoning, to taste
  3. oil, generous amount
  1. In a large skillet heat 2 tbsp olive oil over medium-high heat.
  2. When hot, add in the zucchini, yellow squash, red chili peppers and the bulb (white part) of the green onion.
  3. Saute for about 2 - 4 minutes (for softer zucchini, saute for 5 to 7 minutes), or until vegetables begin to get tender.
  4. Turn heat down to medium.
  5. Add in the coconut milk, sugar, fish sauce, juice of lime, and the green part of onion.
  6. Bring to a simmer.
  7. Stir in green curry paste and cook for 5 minutes.
  8. Stir occasionally and turn off when done.
  9. While curry sauce is cooking, in a large nonstick skillet heat a generous amount of oil over medium heat.
  10. Season both sides of Cod with old bay seasoning. Once pan is hot add Cod to pan (hand motion away from you to prevent hot oil from splashing you).
  11. Cook Cod for 3 – 3 ½ minutes on each side. Do not turn Cod until 3 – 3 ½ minutes per side to prevent sticking. (White fish is known to break into pieces due to it being light and flaky. It is important to have a generous amount of oil).
  12. Remove Cod from skillet. Serve over green curry sauce and vegetables and top with freshly chopped basil. Enjoy!
  1. Tip: Serve with rice, cauliflower rice or quinoa.
