Growing up my grandmother would make chicken and dumplings when it was cold outside. I loved everything about this dish because it is one of the ultimate comfort foods. Unfortunately, when I made it on my own, I could never get the dumplings to come out like my grandmother made them. My inability to make dumpling strips confirms I simply do not have a knack for dough. I discovered potato gnocchi in 2014 when I when I was in Paris, France and it has become a staple in my pantry. The perfect substitution for a traditional flour dumpling. This recipe is simple yet packed with flavor.

Jackfruit and Gnocchi Dumplings Soup is a fresh take on the southern classic Chicken and Dumplings Soup that doesn’t require any kneading of dough!
Ingredients
- 1 – 1 1/2 tbsp oil (olive or avocado) or vegan butter
- 1 cup onion, diced
- 1 cup celery, diced
- 4 cups water or vegetable broth
- 2 not-chicken bouillon cubes
- 2 cups of young, unripe jackfruit in brine (pulled apart)
- 1/2 tsp garlic powder
- 1/2 tsp of onion powder
- 2 bay leaves
- 1.5 - 2 cups frozen peas and carrots
- himalayian pink salt, to taste (optional)
- fresh cracked black pepper, to taste (optional)
- 2 cups plant-based milk (I use homemade brazil nut milk)
- 2 – 3 tbsp of flour (to thicken soup)
- 2 cups potato gnocchi or 1 can Annie’s flaky biscuits
Instructions
- On a 6-quart Instant Pot, select SAUTE; adjust to normal. Add oil or melt butter in insert. Add onions and celery, cook 6 to 8 minutes, stirring occasionally, until vegetables are slightly tender.
- Prep the jackfruit while onions and celery sauté. Drain young, ripe jackfruit in brine from can. Remove the touch pieces at the bottom of each piece of jackfruit. And pull the top part of jackfruit apart to look like chicken cubes.
- Stir in water/broth and or bullion, jackfruit, garlic powder, onion powder, bay leaves, peas, and carrots. Adjust seasoning accordingly. Add salt and pepper if needed. Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 2 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release pressure.
- Meanwhile, if using biscuits separate dough into 5 biscuits. Cut each biscuit into 8 pieces. Set Instant Pot to SAUTE, normal temperature. Stir in milk and flour, heat to simmering. Stir in biscuit pieces or potato gnocchi; cook 4 to 6 minutes, stirring frequently, until dumplings are cooked through and liquid thickens
- Turn off pot.
- Serve immediately.
Notes
NOTE: Can make recipe without an instant pot. Use a large pot.
